If using the Bosch Universal or Bosch Universal Plus mixer, be sure to use the Cookie Paddles with the Metal Holder to make your cookie dough. If you do not own the Cookie Paddles, use the whisks to cream together the first four ingredients and then switch to the Dough Hook to add the remainder of the ingredients. Cream together:
1 1/2 C. butter, melted
1 3/4 C. Sugar
1/2 C. Molasses or Honey
3 Eggs
Add:
1 Tablespoon Ground Ginger (More if you like a stronger flavor)
1 Teaspoon Baking Soda
1 Teaspoon Sea Salt
2 Teaspoons Cinnamon
4 C. Whole Wheat Flour, freshly ground is best
If you cover and chill the dough for one hour, it will be easier to handle. I skipped this step and the cookies still turned out nice.
Preheat oven to 350 degrees. Roll dough into rounded teaspoon size balls, or I used a small ice cream scoop for mine. May dip top of dough in sugar, if desired. Place balls of dough, sugar side up, on slightly greased cookie sheet at least 3" apart. Bake approximately 10 minutes until lightly browned. Allow cookies to cool slightly before removing them. Makes about 5 dozen cookies. I baked and froze these cookies a few days ahead of when I needed them and they were still wonderful when thawed. Enjoy!
