DELICIOUS CARROT MUFFINS

This is a wonderful, easy, nutritious recipe that uses healthy ingredients and your friends and family will love them!

Preheat oven to 350 degrees.

Soak 1 Cup Raisins in 2 Cups Warm Water for about 15 min.  Drain off water.

Combine in a large bowl:
2 Cups Whole Wheat Flour  (Fresh Ground in your NUTRIMILL is best!)
1 Tablespoon Baking Powder
2 Teaspoons Baking Soda
1 Teaspoons Salt
1 Teaspoon Ground Cinnamon

In your BOSCH UNIVERSAL MIXER, with the COOKIE PADDLE ATTACHMENT, Combine and Mix:
4 Eggs
1 Cup Olive Oil or Vegetable Oil
1/2 Cup Honey

Add dry ingredients to wet ingredients and mix only until dry ingredients are moistened.

Fold in:
3 Cups Shredded Carrots or Carrot Pulp  (Apple Pulp is good, too)
Drained Raisins

Spoon into greased muffin tins (I use a Pam-type spray).  Bake in preheated oven for about 30 minutes until done.  Remove from muffin tins and let cool.  May be frozen.  Makes about 22 medium muffins.

HINTS:  I used an ice cream scoop to put the batter into the muffin tins.  They were a beautiful round shape when they finished baking!  Also, when I juice carrots and apples (remove the seeds from the apples before juicing), I use the leftover pulp in this recipe instead of shredded carrots.  No waste!

Yummy Butterscotch Chip Drop Cookies

These cookies turned out really delicious.  Nice texture and so easy to make.  No butter or margarine or shortening in this recipe!!!  I always use fresh ground whole wheat flour to make this treat healthier!  Try it, you'll like it.  You could also substitute peanut butter chips, or mint chips or chocolate chips, etc.  Nuts would also be very good.

Combine in Bosch Universal Plus Mixer bowl, using the Cookie Paddles with Metal Drive:

4 eggs
1 1/3 Cups Olive Oil
1 Tablespoon Vanilla
2 Teaspoons Lemon Juice
1 1/2 Cups Sugar

Add and stir in:
1 Teaspoon Salt
4 Teaspoons Baking Powder
3 1/2 - 3 3/4 Cups Whole Wheat Flour

Add:

12 Oz. Butterscotch Chips (or other flavors of chips)

Dough will be soft, but bakes up nicely.

Preheat oven to 375 degrees.  Drop dough by teaspoonfuls about 2 inches apart on cookie sheet treated with non-stick spray.  Bake 8 - 9 minutes until set or lightly brown.  DO NOT OVER BAKE!  Allow to cool slightly before transferring to cooling rack.  Enjoy!  May be frozen.  Makes approximately 6 dozen cookies.

Mint Chocolate Chip Sugar Cookies

I made these cookies for Thanksgiving.  Our family and friends loved them and went back for seconds, thirds and fourths!  They are so easy and are pretty.  I love that they contain no butter or margarine or shortening!  I used olive oil.  I also used 100% fresh ground whole wheat flour.  HINT:  These cookies will be more of a true "green" if you use white flour in place of the whole wheat.  But, they were still pretty using the light brown whole wheat flour.  And a lot healthier!  The Pure Peppermint Extract can be found in the baking section of your grocery store near the vanilla.

Combine in Bosch Universal Plus Mixer bowl until mixture thickens:

4 eggs
1 1/3 Cups of Olive Oil
1 Teaspoon Pure Peppermint Extract (or to taste)
6 Drops Green Food Coloring (or to desired color)
2 Teaspoons Lemon Juice
1 1/2 Cups Sugar

Add:

3 1/2 to 3 3/4 Cups Whole Wheat Flour (Freshly ground is best!)
1 Teaspoon Salt
4 Teaspoons Baking Powder

Add:

12 Oz. Chocolate Chips (I used semi-sweet).

Preheat oven to 375 degrees.  Drop dough by teaspoonfuls about 2 inches apart on a cookie sheet treated with non-stick spray.  Bake 8-9 minutes until set or light brown.  Do not over bake.  Allow to cool slightly before transferring to cooling rack.  Enjoy!  May be frozen. Makes approximately 6 dozen cookies.

Oatmeal Cookies with M&M's

We don't like to give out candy for Halloween, so I've decided to take a plate of these delicious cookies with their nutritious whole wheat flour and rolled oats to families with children in our neighborhood who know us and will feel comfortable accepting a homemade treat.  I did add small M&M's instead of the chopped nuts or raisins that I would normally use.  My kitchen sure smells good this morning!

Preheat Oven to 350 Degrees

Cream together in your Bosch Universal Plus Mixer:
1/2 Lb (2 sticks) of softened Butter
1 1/2 Cups firmly packed Brown Sugar
2 Eggs
1 Teaspoon Vanilla
1 Teaspoon Baking Soda
1 Teaspoon Cinnamon


Add and Mix In:
1 1/2 Cups Whole Wheat Flour (freshly ground is best)
3 Cups uncooked Rolled Oats (Quick or Old Fashioned)
1 Cup M&M's, Raisins or Chopped Nuts

Drop by rounded tablespoonfuls onto cookie sheet treated with non-stick spray.  Bake 10 - 11 minutes until golden brown.  Cool slightly before removing from cookie sheet.  Makes approximately 4 dozen cookies.

Holiday Pumpkin Cookies

Thursday night is Pack Meeting for our Boy Scouts and I have been asked to bring refreshments.  The boys and their brothers and sisters will be decorating pumpkins!  So we're going to have Pumpkin Cookies for dessert!  I'm making them today, Tuesday, and will then freeze them to take away the stress of last minute baking.  If I decide to put frosting on them, I'll do that before our meeting on Thursday.  I try to stay away from the extra fat and sugar, so these may not get the pretty icing on top.  Bet every cookie gets eaten anyway!  You can taste the fall harvest in these rich, spiced, aromatic cookies.

Pull out your Bosch Universal Plus Mixer (or older model Bosch Mixer) and add the Cookie Paddles with the metal holder.  If you have not yet purchased the Cookie Paddles, which fit even the very old Bosch Universal Mixers, then cream the soft ingredients with the whisks and then switch to the Dough Hook when you add the flour.

Cream together:
1 C. Butter, softened
2 C. Brown Sugar  (I use white sugar with about 2 Tablespoons of Molasses)
2 Eggs
1 Cup Cooked Pumpkin

Add in order and mix:
1/2 Teaspoon Sea Salt
2 Teaspoons Baking Soda
2 Teaspoons Cinnamon
1 Teaspoon Ginger
1 - 1/2 Teaspoon Nutmeg
1/2 Teaspoon Cloves
2 Teaspoons Vanilla
6 Cups Whole Wheat Flour (Freshly ground is best!)

Add:
1 Cup Chopped Nuts, if desired.

Preheat oven to 375 degrees.  Drop by rounded teaspoon onto slightly greased cookie sheet.  Flatten with the tines of a fork.  Bake approximately 8 minutes.  Remove from oven and let cool slightly before removing to wire cooling rack.  Makes about 6 dozen.  Frost, if desired, with powdered sugar frosting, or cream cheese frosting.

Whole Wheat Chocolate Chip Cookies

In your Bosch Universal Plus Mixer, using the Cookie Paddle Attachment with the Metal Whisk Holder:

Cream together:

3/4 C. Granulated Sugar
3/4 C. Packed Brown Sugar
1 Teaspoon Vanilla
2 Eggs

Mix in:
2 -1/4 C. Whole Wheat Flour  (Fresh ground is best!)
1 Teaspoon Baking Soda
1/2 Teaspoon Sea Salt
2 Cups Chocolate Chips or Carob Chips
1 Cup Chopped Nuts (Optional)

Preheat oven to 375 degrees.  Drop dough by rounded teaspoons onto an ungreased cookie sheet and bake 8 to 10 minutes until lightly browned.  Let cool slightly before removing from cookie sheet.  Makes about 6 dozen delicious cookies.

Soft and Chewy Gingersnaps

If using the Bosch Universal or Bosch Universal Plus mixer, be sure to use the Cookie Paddles with the Metal Holder to make your cookie dough.  If you do not own the Cookie Paddles, use the whisks to cream together the first four ingredients and then switch to the Dough Hook to add the remainder of the ingredients.  The Cookie Paddles will fit even the very old Bosch Mixers.  You will love them!  And they have a 5-year warranty! Cream together:
1 1/2 C. butter, melted
1 3/4 C. Sugar
1/2 C. Molasses or Honey
3 Eggs

Add:
1 Tablespoon Ground Ginger (More if you like a stronger flavor)
1 Teaspoon Baking Soda
1 Teaspoon Sea Salt
2 Teaspoons Cinnamon
4 C. Whole Wheat Flour, freshly ground is best


If you cover and chill the dough for one hour, it will be easier to handle.  I skipped this step and the cookies still turned out nice.

Preheat oven to 350 degrees.  Roll dough into rounded teaspoon size balls, or I used a small ice cream scoop for mine.  May dip top of dough in sugar, if desired.  Place balls of dough, sugar side up, on slightly greased cookie sheet at least 3" apart.  Bake approximately 10 minutes until lightly browned.  Allow cookies to cool slightly before removing them.  Makes about 5 dozen cookies.  I baked and froze these cookies a few days ahead of when I needed them and they were still wonderful when thawed.  Enjoy!
